Gantt Chart for Vineyard Harvest and Wine Production

Wine production is an annual project with hard biological deadlines. The harvest window for a given vineyard block might span 10–14 days — miss it and the wine quality degrades. A Gantt chart for vineyard operations maps the entire year from dormant pruning through wine bottling and distribution, ensuring that the right equipment, crew, and winery capacity are available at exactly the moment the fruit is ready.

The Annual Vineyard Calendar

January–March: Dormant Pruning

Pruning is the first major labor operation of the year and the one that most determines vine health and yield. Dormant pruning must be completed before bud break — once buds begin to swell, cut canes are susceptible to spring frost damage if pruning disturbs their protective tissues.

Pruning timing is both a temperature and a calendar constraint. In cool climates (Willamette Valley, Burgundy, Champagne), pruning can begin in January. In warm climates (Central Valley, Barossa), February–March is more common.

Schedule pruning on the Gantt chart with realistic per-acre rates — experienced pruners can prune 0.5–1.0 acres per day. For a 50-acre vineyard, budget 60–120 labor days, accounting for weather days and team size.

August–October: Harvest

Harvest sequencing: Different varietals ripen at different times. Typical sequence in a California red wine program: Sauvignon Blanc → Pinot Gris → Chardonnay → Pinot Noir → Merlot → Cabernet Franc → Cabernet Sauvignon. Schedule the harvest team and equipment to move from block to block in this sequence, with flexibility for weather-driven acceleration.

Harvest crew coordination: Large harvests require substantial labor. H-2A agricultural visa workers must be arranged 6 months in advance through the Department of Labor (DOL) application process. Missing the H-2A application deadline is a harvest crew crisis. Put the H-2A filing date on the Gantt chart in February — it is a critical predecessor to having crews available in August.

Night harvesting: Many premium wine regions harvest at night to preserve berry aromatics that degrade in daytime heat. Night harvest crews work from midnight to dawn. Equipment and logistics:

• Picking bins/gondolas must be staged at each block before harvest begins

Winery Production Schedule

Fermentation (September–November)

After crush, red wines ferment in tanks for 10–21 days, requiring daily punch-down or pump-over operations. White wines may ferment in barrel (10–16 weeks) or tank (2–4 weeks).

Track each lot's fermentation start date, inoculation date, punch-over schedule, and target press date on the Gantt chart. Pressing and Settling (October–December)

Bottling Line Scheduling

Bottling is a capacity-constrained operation, and bottling line time must be booked in advance — either on the winery's own line or through a mobile bottling service. Mobile bottlers book out 2–4 months in advance during peak season (February–June for most California wineries releasing fall vintages).

Predecessor activities before bottling:

• Blending complete and blend finalized
• Labels designed, approved (TTB COLA approval takes 3–6 weeks in the United States), and printed
• Dry goods (corks, capsules, bottles) received and quality-checked
• Cold stabilization or sterile filtration complete (if used)

TTB COLA (Certificate of Label Approval) is a hard regulatory gate in the U.S.: no wine can be sold commercially without it. Submit the COLA application 6–8 weeks before the planned bottling date. Put this milestone on the Gantt chart.

Warehouse and Distribution

After bottling, wine requires a minimum of 2–6 months of bottle aging before release (varies by wine style and producer program). DTC (direct-to-consumer) allocation releases and wholesale distribution releases are separate milestones, each requiring distinct logistics planning.
